Job Description:
1. Participates in and supervises in the preparation of all Dishes ( all salads, dressing and Ala carte items Additional for cold chef de parte ) and Garnishes in accordance with established Recipe cards and methods.
2. Checks daily menu and function sheets to ensure appropriate production levels.
3. Ensure Entrees are correctly garnished before being sent to the Restaurants for service.
4. Checks daily function sheets and daily menu to ensure appropriate production levels.
5. Tastes all item from the Hot/ Cold Kitchen to ensure correct taste.
6. Assists portion control policy/standard plating instruction are adhered to.
7. Ensure meats and poultry ( all Cheese, mortadella items Additional for cold chef de partie )to be carved are done in a correct manner and waste is avoided.
8. Conducts on the job learning events as appropriate.
9. Ensures section is kept in clean and orderly fashion.
10. Ensures that all equipment / utensils in the section are correctly handled and maintained.
11. Participates in menu planning as appropriate.
12. Establishes and maintain effective employee relations.
13. Ensures Best Western Plus Doha Hotel Hygiene and Sanitation Standard is attained in the section.
14. Coaches employees in his section the "Clear as you Go" method of working.
15. Complies with Health and Safety Policy.
16. Assumes the responsibilities of Sous Chef in his absence.
17. Keep an up-to-date standard recipe file for all food items to include:
a. Recipe list
b. Food cost
c. Par stocks
d. Production time.
18. Inform on daily basis the Exec. Chef or his delegate of all relevant information in operational and personal matters, including information which does not require the Executive Chef or his delegate action.
19. Familiarizes yourself with the following procedures:
a. Hotel fire procedures
b. Crisis management system
c. First Aid procedures
d. Health & Safety procedures
e. Hotel security procedures
f. Hotel product knowledge
g. Hotel standard manuals
h. Hotel environmental procedures.
20. Assist Exec. Chef or his delegate to check all in-coming items.
21. Check and receive all store items and properly stored them.
22. Assist Exec. Chef or his delegate for the kitchen inspection.
23. Assists Exec. Chef or his delegate to maintain high rating on Caps, QFI & GSS.
